Asian Chicken Noodle Broth

1Chicken Stock(preferably make homemade from chicken carcass as seen here)
1handful ofMushrooms
1head ofPak Choi
1serving ofNoodles
1Red Peppersliced
Limesto taste
  1. Place the chicken carcass, 2 carrots (cut into chunks) and chopped leek in a large pot and fill with water. Leave to cook for 10-15 minutes
  2. In a separate pot, cook noodles. Once done, drizzle with sesame oil
  3. Remove the chicken from the broth, shred and allow to cool. Finely chop some mushrooms, radish, red peppers. Add these to the broth along with 1 thinly sliced carrot and continue to cook. Add the chopped Pak Choi in the last minute as it requires very little time to cook
  4. To serve, place noodles in a dish and cover with the broth. To finish, garnish with Super Sprouts & Lentil Sprout Mix
