Curried Butternut Squash Soup

Cook Time20 Minutes
  1. On a low heat, melt the butter in a big deep pot
  2. Add the spice if you like and then the chopped onion, allow to soften
  3. Add chopped carrot and celery and coat in the butter
  4. Add chopped butternut squash and allow to soften for 3 or 4 minutes
  5. Make 1 litre of stock and add to pot
  6. Cover and allow to simmer for 15 or 20 minutes until the veg is cooked through
  7. Blend to your preferred consistency and season to taste (lots of black pepper is lovely in this soup)
  8. If it is too thick, you can add water after blended to thin it a little
  9. Top with a swirl of yoghurt and some Good4U Salad Super Seeds and Lentil Sprout Mix to add nutrition and crunchy goodness
