Healthy Pumpkin Pancakes
Recipe developed by our in house Nutritionist Sarah-Jayne. This simple but tasty recipe is a great idea for breakfast or as a delicious dessert.

  1. In a small bowl beat the eggs. Add in pumpkin puree and mix well
  2. Add in the coconut flour and mix until all ingredients are combined
  3. Heat a non-stick pan over medium-high heat. Lightly grease the pan with a ¼ tsp of coconut oil
  4. Pour half of the batter on the pan for one pancake
  5. Cook until surface of pancakes have some bubbles and sides of the pancake firm up, about 2 minutes. Carefully flip the pancakes with a spatula, and cook the underside
  6. Transfer the pancakes to a warm plate, drizzle with maple syrup and add a sprinkle of Good4U Super Seeds
