Moroccan Style Quinoa with Scallops

  1. In a large pot, mix together the onion, ground cumin, turmeric, paprika and cinnamon, quinoa and dried fruit
  2. Once the quinoa begins to pop, add the 2 cups of stock and allow to cook for 10 minutes
  3. Before cooking the scallops, coat them with olive oil and season with salt and pepper
  4. Place the scallops onto a hot pan and cook for 3 minutes on each side
  5. Serve the quinoa in a dish and garnish with lemon juice, spring onion and Good4U Super Sprouts, Good4U Quinoa Sprout Mix & Good4U Sunflower Seed Sprinkles
  6. Mix all the ingredients together, place the scallops on top of the quinoa and enjoy
