Moroccan Sweet Potato & Chickpea Curry

1/2tspCumin(ground or seeds)
1Sweet PotatoChopped
Coconut MilkLow Fat
1handful ofChickpeas
  1. With a pan nice and hot, add the cumin, olive oil and onion and fry it a little bit
  2. Then add your green and red pepper, garlic, ginger, turmeric, paprika and garam masala
  3. Leave to fry and add the sweet potato
  4. Now add the sugar, just to help it to caramelise and then the tomato puree
  5. Cook it for a minute and then put in the chopped tomatoes, coconut milk and chickpeas
  6. Leave to simmer on a low heat for 5 minutes to infuse the flavour
  7. Remove from the heat and add a handful of chopped mint and coriander and finish it with a handful of Lentil Sprout Mix & Super Sprouts
