Pumpkin, Chickpea and Coconut Curry
This dish makes a great belly warmer for these winter evenings. Recipe developed by our in house Nutritionist, Sarah-Jayne.

1/2OnionChopped Finely
400mlCoconut MilkLow Fat
1/4 tspNutmeg
  1. Mince the garlic and finely chop the onion
  2. Sauté in the oil for 3-4 minutes until softened
  3. Add the coconut milk, pumpkin puree, chickpeas, and all of the spices
  4. Stir together and cook over medium heat until everything is warmed through
  5. Add salt and pepper to taste
  6. Pour the curry over brown rice and vegetables
