Roasted Salmon with Pesto Topping

Instructions
  1. Bring the salmon to room temperature 10 minutes before cooking
  2. Warm a large, nonstick skillet pan or a regular frying pan with oil over medium-low heat
  3. Season the fish with pesto, salt and pepper
  4. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden brown on 1 side, about 4 minutes
  5. Turn the fish over with a spatula, and cook until it feels firm to the touch and the skin is crisp if desired, about 3 minutes more
  6. The skin can be served or removed easily with a knife or spoon. Coat the salmon with more pesto if desired
  7. To serve, place salmon on a plate and accompany with some mango topped with Good4U Super Sprouts (we used the Quinoa Sprout Mix but you can substitute this for another sprout mix)
  8. Place a handful of dressed salad leaves on the plate and enjoy
